Romancing The Chocolate: Cookies: Chocolate Nut Biscotti: From Denny: A wonderful cookie recipe from one of my favorite coffee sites: Gevalia. This cookie pairs well with a French Roast or a Dark Roast coffee choice.

I've been ordering from them since Time began it seems. Gevalia is from Sweden where folks drink a ridiculous amount of coffee. We thought Americans were addicted. These guys make us look like amateurs! :)

When I was up on the site ordering some new items today I noticed they started putting up some recipes. You know me; I've got to collect them for you and me to try.

Dennys Food and Recipes: Awesome Holiday Dessert: Baked Pear Parcels With Lemon Chamomile Sauce: From Denny: Pears come in season during the Christmas holidays and are plentiful. But have you thought about what to do with them beyond enjoying them fresh or giving as holiday gifts?

Our local newspaper here in Louisiana included some recipes from USA Pears, so, of course, you know I just had to go explore their site. The site is set up to promote the pear growers' product and awareness of the fruit. Since I've been thinking about setting up my own organic orchards I've been visiting a lot of sites like this one.

While their recipe section is not extensive it has some gems like the following recipe well suited for the holiday table when you want something special to wow the family or your guests. If, you are like me, you like to try new recipes or variations on a popular theme - like baked pears. A nice touch is the lemon chamomile sauce that snuggles up to these pears.

Romancing The Chocolate: Cookies: Chocolate Bliss: From Denny: A melt-in-your-mouth cookie favorite. A local food writer received it from a friend in Nashville, Tennessee. "And she told two friends - and she told two friends..." :) This cookie has been making the rounds with chocolate foodies.

It's an easy recipe, fast enough to whip up for the holidays. Part of what makes this cookie so delectable is that half of the chocolate chips are melted and added to the batter along with the unmelted ones. It's like what chef Paul Prudhomme practiced with the concept of layering the same taste in a dish.

Comfort Food From Louisiana: Cajun Red Beans and Rice: From Denny: Red Bean and Rice is a traditional recipe in Louisiana that was the original Wash Day food every Monday, in every household in New Orleans, rich or poor. These beans could simmer on the stove for hours, leaving time for household chores.

Living in Louisiana, sometimes I forget some people don't know how to make this simple delicious dish. It's seems when I am researching up pops something else that I just know you will want to see.

I've been thinking lately of how to get more beans into our diet by adding to traditional recipes and found some awesome recipes from the various bean grower sites that I will be featuring soon on all my food blogs. If you are not yet sold on beans as a healthy and inexpensive food, this dish would be a great introduction.

The Social Poets: Check Out This Video: Worlds Fastest Flying Human: From Denny: Check out this Norwegian wingsuit flyer/paraglider as he leaps off a high cliff and soars a mile or so over the mountains near a river. He finally pulls his chute open to finish the last glide to land easily on the road where a car is waiting to take him home.

What a rush! He looked like a speeding bullet to the camera crew on the ground as he crested the mountain range. He just zoomed on past them, going maybe well over 130 mph? Turns out he was clocked at 250km/hour - which is 155 mph.

Norwegian Espen Fadnes thought this outdoor activity would be a fun experience for the weekend. He has donned his wingsuit and performed this crazy feat so many times he has earned the dubious honor of World's Fastest Flying Human. In fact, last year he jumped off the Swiss Alps in an international competition, taking home the win.

All you need is a round of brie cheese, some canned cranberry sauce and fresh pecans. Throw it into a slow cooker for a couple of hours over low heat and you have instant magic without a lot of fuss. It will leave you time for wrapping all those gifts and giggling with the kids.

Louisiana Bergeron pecans are wonderful if you can get them where you live. If not, just look for the freshest ones, even asking your grocer when a new shipment is due.

Pecans exude such a wonderful aroma when roasting in the oven that is hard to resist. Make sure you slightly warm the dessert when you serve it for the holidays. That's how we like it at our house! :)

Ouch Outrageous Obnoxious and Odd: Close Encounter Planes Fly Over Your Beach Vacation: From Denny: Check out just how low these planes are when they come in for a landing over Maho Beach at St. Maarten Princess Juliana International Airport in the Caribbean. People actually go to vacation here just to experience the dangerous jet blasts from the landings.

In the second video you will see people falling down on the sand and get blasted by what looks like a mini sand storm. Be sure to bring your safety glasses with you when you go to experience this new cheap thrill for tourists! :)

Here in Louisiana we love Bergeron pecans! Find the freshest pecans you can and buy them in large pieces as they will still retain more of the flavor.

Of course, we cake folk all know how delightful it is to use sour cream in any cake or muffin. The tenderness and full flavor can't be matched by anything else except maybe a high quality yogurt.

From Denny: Over 19 million people laughed off their chairs at the narration of this honey badger video. This is one fierce animal, so fierce it attacks cobra snakes head on and bites off their heads. Unbelievable.

Who needs the pesticide Snake Away when you can adopt a honey badger? Just keep your dogs and cats inside when this beast prowls the neighborhood.


What's more funny is how here in Louisiana one of our LSU Tigers got tagged with the name Honey Badger It Takes What It Wants: Tyrann Mathieu. They used to call him T-Rex for his prowess on the field even though he is small by football standards.

Like LSU Coach Les Miles says, "Never judge a person by their size but by the fight in them." Mathieu has been known to out jump those a good foot taller than him to catch the ball. Unbelievable. Yep, the Honey Badger rules on the LSU football field.

* Louisiana's Crystal Hot Sauce was used in WWI Army field rations. I'm a bigger fan of Louisiana Hot Sauce.  It's milder than Tabasco and less vinegar.  Goes great on eggs in the morning.

* Camellia red beans are the finest grade of red beans.  Camellia buys up all the Hayward (finest top grade) beans, leaving grades A and B for the rest of the country.  Hayward grade beans are named for the family that founded Camellia in New Orleans back in 1923.  They still own it today.

Dennys Food and Recipes: Easy and Simple: How To Make The Best Key Lime Pie: "From Denny: Making your own key lime pie is so simple - and rewarding! It's definitely one of my favorite desserts, especially in the heat of the summer. The tartness really cools you off. FYI, any tart food cools down your liver, which, in turn, cools off your body in hot weather. So, think apples, limes, grapefruit and blackberries if you want to cool off the healthy way.

Florida is known for their key lime pie and there are fans of it all over the country now. The real secret to making this simple and easy famous pie is to purchase real key limes for the recipe. Key limes are very small, very tart and thin-skinned. When ripe they turn from green to yellow.

Most limes in our American grocery stores are those large beautiful, neon green and thicker-skinned Persian limes. Persian limes are also much less tart so they don't deliver that full flavor to the pie cooks, and tasters alike, desire.

How simple is this pie recipe? Really simple: 100 percent key lime juice, sweetened condensed milk and a good graham cracker crust with a little melted butter, brown sugar and chopped nuts. At our house we make the chocolate graham cracker crust while others choose to use traditional pastry crust. It's your preference."

Computer Crashed This Week, Back Up Soon



From Denny: It had to happen sooner or later, right? The Dell Dimension was lingering like a slow tortoise crossing the road and stopping traffic. It just turned five years old.

After a few days of trying to fix it on my own I finally admitted defeat and took it into Office Depot. When I got the high quote I knew the Universe was advising me it was time to purchase a new one for practically the same price. It was just a couple of weeks ago I was in there, cruising the tech aisles, drooling over the terrabyte goodies while my husband grinned and shook his head.

So, yesterday, my husband looked at me and looked at the old guy Dell and said it was time to meet the new BFF guy on the block: HP. Happy Birthday to me a few weeks early. My husband turned to me today and said, "Someone's in a better mood - and so much happier. Welcome back to the plugged in human race." :)

Oh, and for the Fourth weekend Office Depot has lots of great sales on computers and other happy tech goodies.  If you are like me, finally having to part with an old friend, take a look around.  Who knows?  You just might meet the new love of your life!
