Dennys Food and Recipes: BBQ Grilling: 3 Tasty Compound Butters To Compliment Your Recipes: From Denny:  Whether you are grilling or baking in the oven specially infused butters offer wonderful flavor choices to celebrate your food!  Chef Sara Moulton is known for easy recipes that can be done at home with a minimum of fuss.  She's also one of my favorite food teachers as she is so relaxed, giving even the novice cook a boost of confidence.

Her first recipe is for an herb butter.  Do you have some favorite herbs that you just can't cook without?  This recipe is all about your favorite combination of herbs, though she does suggest a few to get you started.  While you could substitute a Vidalia sweet onion in place of shallots, well, shallots are that much sweeter, and, oh, so wonderfully flavorful so try to find them in your area.  Shallots, a favorite of classically trained chefs, are usually in plentiful supply in the spring and summer months, often into autumn.

Are you more in the mood for a citrus butter?  Chef Moulton combines the zest and juice of lemons and limes for a sublime summer taste that everyone will enjoy.

How about something more substantial for those manly men who enjoy a great grilled steak?  Oh, this recipe is for you!  Combine this steak butter with Dijon mustard, a fresh finely minced garlic clove and Worchestershire sauce (we prefer Lea & Perrins at our house though you could use the brand you like),

If you can't grill outside just use a grill pan on the stovetop to get those prized grill marks, turn it over and place it in the oven to finish.  When ready to plate make sure the steak plate has been heating in the oven. Place a large slice of this steak butter onto the plate and then place the steak on top of the butter.  Talk about awesome taste as the butter melts on the very hot plate, spilling out like a gravy for your steak!  That's the method all the old steakhouses of the 1940's and 1950's used before restaurants went to open charcoal or wood fired grilling.

The beauty of all these butters is that all you have to do is roll them into logs and wrap in plastic wrap and aluminum foil and freeze until ready to use.  Just slice off the amount you need and return it to the freezer.  How simple is that?  You can make these up way ahead of when you will need them...

Dennys Food and Recipes: BBQ Grilling: Try Grilled Summer Cooling Puttanesca Gazpacho: From Denny:  Fancy a cold soup to counter the ridiculous hot heat of the summer?  Gazpacho is everyone's favorite, especially when entertaining for large groups.  This version involves grilling all those delicious veggies like red bell peppers, poblano peppers, tomatoes, onions, cucumbers and a head of fresh garlic.

Let the charred peppers cool before removing the skins and the inside seeds and membranes. Squeeze the cooled soft garlic cloves out of their papery skins and into the food processor.  Add the delicious flavors of capers, Kalamata olives, anchovies, olive oil and balsamic vinegar.

Make the soup as chunky or as smooth as you like.  Chill well before serving.  To serve, garnish with yummy ricotta cheese and fresh torn herbs like cilantro and basil.  Then sit back and wait for the compliments to arrive!...

Dennys Food and Recipes: BBQ Grilling: Goat Cheese Stuffed Grilled Sweet Potatoes: From Denny:  This is a delicious unusual recipe twist for the popular sweet potato.  We all know that goat cheese is a low salt and low fat alternative to the regular highly salted - OK, totally yummy - cheeses.

I've tried goat cheese as the soft melting quality cheese in my omelets and found it a bit sour in comparison to  my favorite cheddar cheese but eventually created a medley of white cheddar, fontina or mozzarella in addition to just a touch of goat cheese for my favorite blending of flavors..

Yet that slightly tangy sour taste is the perfect healthy complement to the very sugary sticky sweet potato.  This recipe also adds fresh thyme and olive oil for aromatic delight and lots of fresh garlic and butter for robust flavor.  To sweeten it up a bit the zest of an entire orange is added for that citrus brightness that pairs so very well with sweet potato!

It's advised you slice the sweet potato in thick chunks so it is easy for the thick smear of cheese, oils, herbs and citrus zest to adhere better.  If you like your potatoes to have a bit of crispness on the skin, then open up the aluminum foil in the last 10 minutes of grilling to brown and crisp up a bit.

Also note that you will require a microwave to partially bake the potatoes before placing on the grill.  This recipe is best done at home instead of at some remote fishing camp with no electricity - like we have so many of here on the Gulf Coast, especially Louisiana. :)

This is such an easy recipe it is kid friendly and a good choice to help teach the kids to learn how to grill by helping you with the prep work.  What creative kid would not enjoy smearing a gooey mess onto those sweet potatoes?  I rest my case. :)  Enjoy!

Dennys Food and Recipes: BBQ Grilling: Red Onions, Shishito Peppers with Peanut Sauce: From Denny:  When it comes to summer entertaining we all like to fire up the grill.  Well, here's a finger friendly recipe for those chili pepper nibblers and snackers who want to try the latest Shishito pepper sensation in the food world.

The peanut sauce is a medley of awesome flavors: smooth natural peanut butter, red wine vinegar, fresh garlic, fresh ginger, soy sauce and your favorite hot sauce.  All that's left to do is add some other good recipes to your party menu like this grilled chicken dunked in that famous Alabama White Sauce!

Dennys Food and Recipes: Chef Recipe: Simple Tasty Coleslaw For Your BBQ: From Denny:  Looking for a new coleslaw recipe to impress the family and friends at your next barbecue?  This one is tasty as it includes both red and green cabbage which play off each other well both for color and taste.  The red cabbage is not as bitter as the green.  Carrots, red and yellow bell peppers help to sweeten the cabbage along with the mayonnaise.  The 1/4 cup sugar used looks like a lot but not in relationship to the 16 cups of cabbage.

Spices?  Lots of fresh herbs like Italian flat parsley, thyme, cilantro and basil.  Dry spices added are small amounts of cayenne pepper and cumin.  If you want to kick it up another notch to the salad dressing you could add some garlic powder and smokey paprika to your taste.

Video and Recipe: Malaysian Rib Spring Rolls

From Denny: This video was originally run for the Fourth of July season, yet good food is good any time of the year. Right now, tail-gaters for the football season are looking for the unusual take on barbecue ribs and this recipe just jumped out at me to post. As an American kid who spent time in Asia, I grew to love Asian cooking and this chef just captures such wonderful flavors in this recipe you just have to try it! Chef Halston's recipe is both unusual and innovative.





Finger-licking good! Malaysian rib spring rolls, a mouthwatering Asian-themed dish

Malyasian rib spring rolls with maple and tuong basil sauces

INGREDIENTS

Malyasian short ribs

• 1/4 cup olive oil
• 2 pounds Sterling Silver beef short ritbs 1-bone
• 2 tablespoons porcini mushroom seasoning (Market Salamander brand)
• 1 teaspoon black pepper, milled
• 1 cup garlic cloves
• 2 tablespoons ginger, peeled and rough-chopped
• 8 full-length stems fresh rosemary
• 1 cup port wine
• Beef stock (enough to cover by 3/4)

Crisp spring rolls filling

• 1/4 cup olive oil
• 2 tablespoons garlic fresh chopped, fine
• 1 medium carrot
• 2 ounces leek, white and green julienne
• 1/2 pound Napa cabbage, shredded
• 1 tablespoon ginger, fresh peeled, very fine dice
• 1 tablespoon porcini seasoning
• 1 teaspoon sea salt, granulated fine
• 1 teaspoon black,peppe, milled
• 2 pounds short rib meat (shredded by hand)

Malaysian peanut slaw mix

• 3 full leaves white cabbage, fine shredded
• 3 full leaves Napa cabbage, fine shredded
• 1 full leaf red cabbage, fine shredded
• 2 leaves baby arugula leaves shredded
• 25 sticks carrots, peeled matchstick

Crisp spring rolls rolling

• 10 spring roll wrappers
• 1/2 cup egg whites (lightly whisked)
• 2 ounces short beef
• 1 ounce vegetable mix

Lite soy dipping sauce

• 1/2 cup lite corn syrup
• 1/2 cup soy sauce, light
• 1/4 teaspoon red pepper flakes
• 1/2 cup green onions, sliced 1/4-inch
• 1 teaspoon mustard powder
• 1 tablespoon Dijon mustard
• 1 tablespoon sesame oil
• 1/4 cup brown organic sugar
• 1 teaspoon ginger powder
• 1/4 cup rice vinegar, seasoned Marukan

Peanut dressing

• 1/2 cup rice vinegar, seasoned
• 1/2 cup peanut butter, creamy
• 1/2 cup soy sauce, lite
• 1/4 cup sesame oil
• 3/4 cup olive oil
• 4 ounces cilantro, fresh leaves, no stems
• 1/3 cup sugar, organic white
• 1 tablespoon mustard, ground dry
• 1 teaspoon ginger, dry powder
• 1 tablespoon Malaysian chili sauce
• 1 teaspoon black pepper, milled fine

DIRECTIONS

Malaysian short ribs


Preheat oven to 250 degrees; you need the oven for 4 hours.

In a pan over high heat, warm the pan for 1 minute. Evenly sprinkle the meat with porcini mushroom seasoning.

Add the oil to the pan. Evenly cover the bottom of the pan with pieces of short ribs. Cook to a nutty brown color on one side; turn over, add the garlic cloves and ginger and cook to nutty brown. Add wine and bring to a boil. Add the beef stock and bring to a boil. Remove from the heat. Cover with a lid and place into the oven. Set the timer for 4 hours.

After cooking, place the pot uncovered into the refrigerator; when cool, remove the meat from the bone.

Spring rolls filling

In a saute pan over medium heat, warm the pan for 1 minute; add the oil and warm the pan for 30 seconds. Add the garlic, carrots, leek, cabbage and ginger; evenly sprinkle the vegetables with the porcini seasoning and sea salt; saute until the vegetables have softened, about 2 minutes. Spread the ingredients on a sheet pan; place uncovered in the refrigerator until cool.

Malaysian peanut slaw mix

Place all items into a bowl and evenly mix.

Crisp spring rolls wrap

Place the wrapper onto a clean sanitized area of a table with one point of the wrapper pointing toward you. Evenly brush the wrapper with the egg whites. Place the beef about 1 inch away from the point in a log shape. Place the vegetables on top of the beef. Place the point over the meat and veg. Mix, squeezing the mix tightly. Roll 1 time. Fold each edge tightly over the top and lightly press to seal. Continue to roll in a small log shape.

Lite soy dipping sauce

In a pot over medium heat add all ingredients; whisk for 1 minute and bring to a boil. Cook for 4 minutes exactly, whisking every minute, and remove. Pour the sauce into a glass or plastic container; refrigerate until cool.

Malaysian peanut dressing

Place the peanut butter in a plastic container. Place your Bermixer into a plastic container, add the vinegar, start the mixer. Add the soy sauce, sesame oil, olive oil, cilantro and mix for a few minutes. Add the sugar, mustard, ginger, chili sauce and pepper; mix for 2 minutes. Cover with a lid and refrigerate.

Wing King's BBQ Buffalo wings

From: Drew Cerza

Prep time: 15 minutes

Cook time: 15 minutes

INGREDIENTS

• 2 T. butter
• 1 large shallot
• 2 garlic cloves
• Dark beer 2 oz.
• Chili sauce 1 cup
• BBQ sauce 1 cup
• (Stir up for 1 minute)
• Ancho pepper 1 1/2 t.
• Brown sugar 1/2 cup
• Honey 1/2 cup
• Cayenne pepper sauce 4 oz.

DIRECTIONS

Chop up and sauté butter, shallot and garlic cloves. Add dark beer, chili sauce and BBQ sauce — stir up for 1 minute. Add ancho pepper, brown sugar, honey, cayenne pepper sauce — stir for 2 minutes.

As you create the sauce, drop 50 chicken wings (the amount you drop in at one time will depend on the size of your fryer) in your table-top deep fryer.

Once wings are fully cooked, sauce the wings in a large mixing bowl. To plate the wings: Garnish the plate with celery and carrots and serve with a side of blue cheese dressing.
TIPS

Serve with celery and blue cheese dressing. For equally crispy wings: Deep-fry wings at 375° F (High) 10 minutes until cooked and crispy; drain and serve.

Original Buffalo Wings

Makes: 24-30 individual pieces

Prep time: 10 minutes

Cook time: 20 minutes

INGREDIENTS

• 2 1/2 pounds chicken wings
• 1/2 cup hot sauce
• 1/3 cup melted butter or margarine

DIRECTIONS

Split wings at each joint; discard tips. Place wings on rack in foil-lined pan.

Bake 20 minutes at 500° F until fully cooked and crispy, turning halfway.

Combine hot sauce and butter. Dip wings in sauce to coat completely.
TIPS

Serve with celery and blue cheese dressing. For equally crispy wings: Deep-fry wings at 375° F (High) 10 minutes until cooked and crispy; drain and serve.

Recipe: Fast Easy Barbecue Bacon Chicken Breast



From Denny: How many times have we all wished for a wonderful meal in just minutes from ingredients already in the house? I've made this same recipe many times and loved it both for its simplicity, ease of making and speed to the table.

Barbecue Bacon Chicken Breast

Note from Jeanne Besser: Crystal Ellis of Marietta writes, "Here's a great-tasting easy main dish created from my refrigerator. Kids love it!" This is truly a meal most of us can cull from our reserves, but that still makes a substantial dinner. I added the step of crisping the bacon under the broiler, but if you like softer bacon, you could skip this.

Total time: 30 minutes
Serves: 4

Ingredients:

1 (1 1/2-pound) package boneless, skinless chicken breasts

4 strips thin bacon, cut in half

9 ounces ( 1/2 bottle) honey barbecue sauce (or your favorite flavor)

1 cup shredded cheddar cheese


Directions:

Preheat the oven to 350 degrees. Line a 9-by-13-inch baking dish with foil. Sprinkle chicken breasts with pepper to taste. Place 2 bacon strip halves horizontally to cover chicken breasts. Top with barbecue sauce and fold foil over to make a packet. Bake for 20 minutes, or until chicken is just done. Increase heat to broil. Open foil and broil until bacon crisps, 1 to 2 minutes. Top with cheese. Put back in oven and cook 1 to 2 minutes, or until cheese melts.

Nutrition:

Per serving: 420 calories (percent of calories from fat, 34), 43 grams protein, 26 grams carbohydrates, no fiber, 16 grams fat, 128 milligrams cholesterol, 952 milligrams sodium.
