Dennys Food and Recipes: Breakfast: Easy Simple French Toast Casserole

Dennys Food and Recipes: Breakfast: Easy Simple French Toast Casserole: From Denny:  Whether it's the holidays, a busy summer when the kids are out of school or company came to visit, we all need something fast and simple to put together that's a crowd pleaser.  This simple easy to assemble breakfast casserole fits that bill!

All the ingredients required are a loaf of good French bread, a full 8 ounces of your favorite brand of cream cheese, milk, maple syrup, butter, sugar and eggs.  Add fresh fruit to serve and it's that easy!

Usually when a recipe calls for sugar I often substitute agave syrup or brown rice syrup or even molasses.  If you don't like or can enjoy cow's milk why not substitute almond milk?  When butter is in a recipe I choose to clarify it just because we love the extra boost of flavor at our house from browning and filtering out the milk solids - as well as the added health benefits.  You could use margarine in this recipe as a substitute too.  And, to gild the lily, why not add a few shakes of nutmeg and/or cinnamon, some chopped pecans or walnuts before baking?  Yeah, Flavor Town is the name at our house...

Dennys Food and Recipes: Summer Food: Blueberry Yum Yum Cake Says It All





Dennys Food and Recipes: Summer Food: Blueberry Yum Yum Cake Says It All: From Denny:  This sheet pan cake of creamy goodness only requires two cups of fresh blueberries.  First you make a simple syrup of water and sugar, add cornstarch to thicken, then add the blueberries.  Set the blueberry topping aside to cool while you create the crust.

The crust is a yummy combination of finely chopped pecans, butter and flour that you pat into the sheet pan and bake for about 10 to 20 minutes to make your tasty crust.  Set aside to cool.

To make your filling you combine the cream cheese and powdered sugar together and when that is well combined you add in the whipped topping, pouring it into the cooled crust.

After the blueberry topping has cooled then pour over the cream cheese-powdered sugar-whipping topping mixture.  Now set the sheet pan of blueberry goodness into the fridge to chill well.  Serve to screams of total delight!...

A Christmas Post: Holiday Recipe: Fig and Toasted Almond Scones: From Denny:  Autumn is here - and so is daylight savings time this Sunday when we "fall backward" one hour - so don't forget to set your clocks back one hour!

For some reason I've been enjoying the vegan scones over at Whole Foods the past couple of weeks now that the weather has cooled.  So, that sent me on The Scone Recipe Chase to see what is out there in recipe database land.  Found these little autumnal gems over at King Arthur Flour.

Figs are quite popular here in Louisiana where many a backyard grows a fig tree.  Almonds are popular in California where they supply the nation! This is the time of year when the nation's nut orchards are releasing their bountiful harvest of pecans (Louisiana and Texas), almonds, walnuts and macadamias so we are all tempted to start our holiday baking early! At least I believe that's their marketing strategy to sell more nuts. :)

Scones are an easy way to try out some fruit and nut combinations to see how the family and friends enjoy the idea.  While I love my blueberry and lemon scones of the summer it's time for something different for the fall season so we wanted to try these fig and almond scones at our house.  Of course, if figs or almonds are not your preference, know that you can always try figs and walnuts or cranberries and almonds or whatever grabs your fancy this baking season.

Don't feel like the extra effort and time of slicing the scone dough into proper triangles?  Try the method the King Arthur Flour bakers suggest:  bake them into rounds just using 1/4 cup of dough for each scone, leaving 2 inches between them.  That amounts to the idea of a drop scone, much like a drop biscuit...

Dennys Food and Recipes: Fall Recipe: Breakfast Or Dessert Enjoy Spiced Golden Apples: From Denny:  It's Autumn and time to enjoy cooking apple dishes!  What smells better than apples baking in the oven?  Talk about making the house smell good.

This is an easy dish to make for your family, one they will request often.  Our house prefers dark brown sugar in place of the usual white sugar, your choice, because both taste good.

Saigon cinnamon is quite an awesome choice too.  Found that at Whole Foods locally but I'm sure it's available at other stores in your area.  Just take the time to check.  Saigon cinnamon has more of the "cinnamon" taste and smell we all love, better than the generic cinnamon offered by most spice companies.  You will be familiar with it if you frequent coffee houses.

How much do you know about all the new varieties of apples?  Have you tried any of them?  Seems like there is always something new to explore at the grocery store.  Many of the new apples are crosses between two really outstanding varieties.  Hey, more is better, so why not!  Try picking up two new varieties on each grocery visit and then compare them for taste and texture. While there are over 100 apple varieties in the United States, we only see the best sellers at our grocery stores...

Comfort Food From Louisiana: Tailgating Pancakes: Beer and Bacon Man Cakes: From Denny: More ways to use beer and bacon in delicious recipes, two favorites men love. OK, if it uses dark beer even I'm intrigued. After all, many dark beers - like Boston's own Samuel Adams Cream Stout - have chocolate in the brew.

A favorite recipe from the Betty Crocker site is this one that includes bacon that is baked and candied with brown sugar. Then you crumble the bacon into the Bisquick mix, along with the eggs and beer. The result produces a large and fluffy pancake.

Talk about a cool recipe to use for tailgating. Can you imagine the smell of the bacon and brown sugar wafting through the RV parking lot outside of the stadium? You will have new best friends in no time! :)

Comfort Food From Louisiana: 2 Recipes: Coffee Cake and Apple Cake Topped with Pecan Streusel: From Denny: Lots of tasty pecans throughout this dense coffee cake, perfect for breakfast or an afternoon snack with a great cup of dark coffee. Here in Louisiana we love Bergeron pecans! Find the freshest pecans you can and buy them in large pieces as they will still retain more of the flavor.

Of course, we cake folk all know how delightful it is to use sour cream in any cake or muffin. The tenderness and full flavor can't be matched by anything else except maybe a high quality yogurt.
