Posts Roundup This Week at Dennys Blogs 2 May 2010

From Denny: When I started these blogs they were to help get back my brain functioning after a car accident that took three years to fully heal. It seems the more I pushed a healing brain the more it responded favorably! Who knew? Life sure takes some twists and turns, doesn't it?

What I was most concerned about was what if my brain might shut down again and the knowledge and understanding gained from a lot of life testing would be lost without a voice. So, I started yet another blog, Beautiful Illustrated Quotations, to record some of my spiritual thoughts. I've always enjoyed quotes as a writing prompt, especially spiritual ones. And then, all of a sudden, this year that blog took off with thousands of views per post. Again, who knew? What started as the weakest blog, that I just figured was a very small niche market, ended up getting well read compared to all the others - other than the crazy photo blog that took off as well on the same level. I guess people like to go on visual coffee breaks with me when I go tripping through the Flickr database for interesting photos for a post. :)

So, thank you, everyone, all of you have been just great to support these blogs. I never know what I will write about, report on or share each day in every post yet there is always something interesting to discover in this world - and I do like to share. Sharing is a way to give back in this world, pay it forward, say thank you, make them laugh or help ease someone else's burden when they are stressed. 2 Crowd Pleasing Easy Casseroles: Mexican Lasagna, Turkey Tetrazzini

From Denny: Our local newspaper often runs some very easy recipes that are real crowd pleasers. They are great to have on hand for entertaining, gatherings for christenings, homecomings, reunions or funerals. Even though this is a big city people still rally together when there is a death in the family. When that happens neighbors always bring over a dish of food so the grieving family does not have the burden of cooking during a stressful time when friends and relatives gather.

Other times neighbors pull a dish out of their freezer, ready to go, when there is a new baby born or other special homecoming like a soldier returned from Iraq or Afghanistan. Around here in south Louisiana people love to cook and love to share their simple food with everyone. It's just tradition to give of your food!

Both of these recipes can be made ahead and then reheated, often tasting better as the flavors have a chance to sit and have a long conversation of mingling. :)

The Mexican version of lasagna will please all your beef eaters in the family. Ground beef is cooked along with green bell peppers and taco seasoning spices and diced Ro-tel tomatoes (jalapenos and tomatoes). Then this ground beef mixture gets layered up with a cream cheese and sour cream combination, then layers of lasagna noodles, yummy cheese and olives.

Now Turkey Tetrazzini is one of those comfort food casseroles you like to make for someone when they are recovering from a cold or the flu. You can also make it with chicken or include bits of ham.

This recipe comes from the local newspaper food writer, Carol Anne Blitzer. She adapted this recipe from Mrs. Lenton Sartain’s Chicken Tetrazzini recipe from local but nationally popular cookbook, “River Road Recipes.” She doubles the recipe so she can freeze one casserole to have ready to go.

Mexican Lasagna

From: Lynette Nolan, "This makes a big dish so I always make this for company. It’s one of those dishes everyone likes, and all you need to go with it is a vegetable and a big green salad."

Makes: 12-15 servings

Ingredients:

2 tbls. vegetable oil
1 small onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
2 lbs. lean ground meat
1 (10-oz.) can Ro-tel tomatoes and green chilies (original or mild)
2 tbls. chili powder
1 (1-oz.) pkg. taco seasoning mix
2 (8-ozs.) cans tomato sauce
8 ozs. lasagna noodles (either the precooked or the type you cook)
1 (8-oz.) container sour cream
1 (8-oz.) pkg. cream cheese, at room temperature
1 or 2 green onions, chopped
1 lb. Monterey Jack cheese
with jalapeño peppers (or plain, if desired), shredded
1 (2.25-oz.) can sliced black olives
1/4 cup sliced pimento-stuffed olives

Directions:

1. In skillet, heat oil and add onions, bell peppers, garlic and ground meat. Cook until meat is no longer pink and vegetables are beginning to soften. If any fat accumulates around edges, remove it with a spoon. Add Ro-tel tomatoes, chili powder, taco seasoning and tomato sauce. Continue simmering for 15-20 minutes, stirring occasionally.

2. Meanwhile preheat oven to 325 degrees and cook the noodles according to package directions. Some brands do not require cooking beforehand.

3. Blend sour cream and cream cheese together until smooth. Stir chopped green onions into cream cheese mixture and set aside.

4. Spray 9x13-inch baking dish or pan with nonstick coating. Layer bottom of dish with lasagna noodles. Spread half of the meat mixture over noodles. Add half of the sour cream/cream cheese mixture. The easiest way is to drop spoonfuls of the creamy mixture over surface and then spread. Sprinkle with half of the cheese.

5. Repeat layers but add olives before adding grated cheese: (noodles, meat, sour cream/cream cheese mixture, olives, then grated cheese). Cover with foil but tent it slightly so top will not stick to cheese.

6. Bake in preheated 325-degree oven for 1 hour or until bubbly and noodles are tender.

Turkey Tetrazzini


From: Mrs. Lenton Sartain from “River Road Recipes” is adapted by Carol Anne Blitzer, food writer from 2theadvocate.


Fills 2 (9 x 11-inch) aluminum foil, deep-dish pans, each of which serves about 8.

Ingredients:

1 to 1-1/4 lbs. spaghetti
1 stick butter
1/3 cup all-purpose flour
1 qt. whole milk
1 tsp. dry mustard
1/2 tsp. black pepper
Juice of 1 lemon
Tony Chachere’s Original Creole Seasoning, to taste
4 to 5 cups chopped cooked turkey
1 (8-oz.) can mushroom stems and pieces, drained
1/2 to 1 lb. cheddar cheese, grated


Directions:

1. Cook the spaghetti according to package directions to the al dente stage.

2. In a large saucepan, melt the butter and blend in the flour. Slowly add the milk, stirring over low heat until mixture forms a medium white sauce. Add dry mustard, black pepper, lemon juice and Tony Chachere’s seasoning.

3. Mix in the turkey and the drained mushrooms.

4. Drain the spaghetti and add into the sauce mixture.

5. Divide into 2 casseroles. Top with cheese. At this point, Carol Anne Blitzer freezes the casserole(s) until needed. When ready to serve, thaw casserole in the refrigerator and reheat at 350 degrees until bubbly. Be careful to make a tent of a sheet of aluminum foil to place over the casserole as it bakes so that the cheese does not stick to the foil and the spaghetti doesn’t dry out.

Kid Friendly Recipes: Chocolate Quesadillas, Very Best Fudge

From Denny: It's still April so I suppose I can sneak in this cute photo of fudge in an Easter basket. :) I've been wondering what to do with this "orphan" recipe until I came across another delightfully simple recipe that is also kid friendly for when you want to work in the kitchen teaching your kids how to bake.

What's also fun is the second recipe is from a local Louisiana nine year old boy who is trying his hand at blogging. He catalogs his new food experiences and talks about his food choices at the restaurants he thinks are kid friendly. A food critic is born! And since I like to encourage budding writers, well, here I am promoting the kid. I do enjoy precocious kids! :)






Very Best Fudge

From: Family Features - Nestlé Test Kitchens

Makes: about 4 pounds

Ingredients:

3 cups granulated sugar
1 can (12 fluid ozs.) evaporated milk
1/4 cup (1/2 stick) butter or margarine
1/2 tsp. salt
4 cups miniature marshmallows
4 cups (24 ozs.) or 2 (12-oz.) pkgs. Nestlé Toll House Semi-Sweet Chocolate Morsels
1 cup chopped pecans or walnuts, optional
2 tsps. vanilla extract


Directions:

1. Line 13x9-inch or two 8-inch-square baking pan(s) with foil.

2. Combine sugar, evaporated milk, butter and salt in 4- to 5-quart, heavy-duty saucepan.

3. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.

4. Stir in marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted.

5. Pour into prepared baking pan(s). Refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into pieces. Store tightly covered in refrigerator.






Chocolate Quesadillas

From: Catherine Prados. Her 9 year old son, Michael, writes Junior Food Critic, a blog where he writes of his food discoveries and kid friendly restaurants.


Serves: 2

Ingredients:

2 flour tortillas
2 squares Baker’s chocolate (German chocolate works well), melted
Confectioners’ sugar


Directions:

1. Place one flour tortilla in a quesadilla maker or skillet that has been sprayed with cooking spray.

2. Spread melted chocolate over the tortilla.

3. Place the second flour tortilla on top and close the quesadilla maker or put a top on the skillet. If you are using the quesadilla appliance, cook for 1 minute or until desired crispness and slight browning are achieved. If using a conventional skillet, cook for 1 minute and then carefully flip the quesadilla to brown and crisp the second side.

4. Remove from quesadilla appliance or skillet and place on large cutting board. Cut into six pizzalike triangles and dust with confectioners’ sugar. Serve warm.

Cooking 4 Men, Teaching Men to Cook 2

From Denny: This is a dilemma many mothers, wives, girlfriends and cooks face - how to feed men and boys when suddenly the Hungries strike and they growl and demand to be fed immediately. And they do not have a sense of humor if you tell them to wait a few minutes or don't snack before dinner. My guess is their blood sugar is about to drop dramatically and that's why they are so grumpy and ravenous all at once.

Lucinda Scala Quinn was featured on CBS The Early Show food segment recently. She wrote a book to help the men and boys in your life with The Hungries. Quinn notes, "Every guy loves to eat, but not every guy loves to cook."

She is an expert at feeding men and boys, including her four brothers, husband and three sons. So, naturally she wrote the funny title: "Mad Hungry: Feeding Men and Boys." In this food video she demonstrates how to teach your men and boys to make hearty satisfying meals quickly.

The TV show host, Harry Smith, is having fun and misbehaving throughout the entire segment instead of the two boys who turn out to be quite teachable. Quinn was unflappable, in good humor and taking it all in stride to not miss a beat to teach the boys and demonstrate the recipes.

Vinegar Glossed Chicken

Serves: 6 to 8

From Quinn: This dish has been in heavy rotation in our home as a favorite weeknight dinner option for at least twenty years. Originally made from an Italian recipe of unknown origin, it has morphed into our own, though my husband and I each make it a little differently. This much is certain, however: when the rosemary vinegar is added to the pan of golden browned chicken, alchemy occurs as the vinegar deglazes those brown bits and reduces itself into a syrup. It permeates each chicken piece with an agrodolce (sweet-and-sour) flavor. There's no better accompaniment than polenta, soft and loose or firm and sliced. It's a heavenly combination of textures and flavors. (Rice, pasta, or bread will also work, as long as there is something to sop up the sauce.) Like many of the dishes here, it only improves when made in advance.

INGREDIENTS:

1 cup best-quality red wine vinegar
2 to 3 garlic cloves, minced (about 2 tablespoons)
3 sprigs of fresh rosemary (about 1 tablespoon minced)
5 1/2pounds bone-in chicken pieces (each part should be cut in half)
Coarse salt and freshly ground black pepper
Extra-virgin olive oil
3/4 cup chicken broth, plus more as needed

METHOD:

At least 15 minutes but up to 2 hours before cooking, combine the vinegar, garlic, and rosemary to marinate.

Thoroughly season the chicken pieces with salt and pepper. Heat a 14-inch skillet (or two smaller skillets) over high heat and swirl in enough olive oil to coat the bottom of the skillet. Place the chicken in the skillet, skin side down. Don't crowd the chicken; leave space around each piece. Work in batches if necessary. You should hear an immediate sizzle when the chicken pieces hit the pan. Don't move them; it takes a couple minutes to sear the chicken so it doesn't stick. Brown all sides; this will take 10 minutes per batch. Regulate the heat so it stays high but does not burn the chicken. Place all the browned chicken back in the skillet.

Add the chicken broth and scrape up any brown bits from the bottom of the pan. Lower the heat, simmer, and reduce for 15 to 20 minutes. Increase the heat to high and pour in the vinegar mixture. Swirl the pan and stir around as the vinegar evaporates to form a simmering glaze, 8 to 10 minutes. Serve immediately or reheat with some extra broth.




Boy Salads

From Quinn: Boys will eat salads, but only the right salads. Some girls will eat any salads just because they think they should, but many boys will eat them only if the salads look and taste good. First and foremost, know that wet lettuce ripped into big chunks is a turnoff. But a salad prepared from cold, dry, crisp bite-sized lettuce, mixed with carefully considered add-ins and dressed in a vibrant, acidic vinaigrette, is easy to love, especially after repeat exposure. Washed and dried lettuce is the key to a great salad.




Rose's Vinaigrette

Makes: 1 cup

Quinn: All the green salads we had while growing up were dressed with my mom's vinaigrette. My dad thought it was the best dressing there ever was. Make it directly in a jar with a tight-fitting lid and store it in the refrigerator for up to 6 months. This dressing is also key to the success of Rose's beloved White Bean Salad.

INGREDIENTS:

1 tablespoon minced shallot or garlic
1 teaspoon Dijon mustard
1 teaspoon light brown sugar
3/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon Worcestershire sauce
2 1/2 tablespoons red wine vinegar
2 tablespoons fresh lemon juice
3/4 cup extra-virgin olive oil

METHOD:

In the bottom of a clean jar, mash together the shallot, mustard, brown sugar, salt, pepper, and Worcestershire sauce. Pour in the vinegar, lemon juice, and olive oil. Cover tightly and shake well to combine and emulsify. Add salt and pepper to taste. Use immediately or store in the refrigerator.





Men Love Pie

Quinn: My boys love desserts, and pie is their favorite hands down.

My husband says he longs for good pie. "There is so much bad pie out there," he frequently laments. He remembers his mother's apple pie and how great it was, with a very salty crust and perfect fruit. He also recalls her chocolate banana cream coconut pie, which consisted of delicious chocolate pudding with banana on it, topped with whipped cream and toasted coconut. Regular crust, not a graham cracker one.

Any great pie begins with a great crust, something that intimidates many a fi ne cook. The first pie dough I learned to make successfully was for a cream cheese crust. I make it to this day and recommend it to anyone shy about trying crust. Its flavor is savory and cracker like. But the real baking secret for many down-home crusts is lard: ask any old-school pie baker, and I'll bet his or her crust is made with it; I think the pies of my husband's childhood owe their success to it. Try substituting lard for some or all of the butter in a pastry recipe and see for yourself the difference it makes in flavor and texture.

Since I've worked alongside many skilled bakers, I've learned many other tricks of the trade:

• Work cold and fast. Keep all your ingredients cold, including the flour.
Cold pieces of butter within the dough are what steams up in the baking and creates flakiness.

• Don't over mix the dough. Blend just until combined.

• Even if your dough doesn't fully combine into a ball, turn it out onto a large piece of plastic wrap. Gather the pieces and press it together.

• Wrap firmly in plastic wrap and chill for 30 minutes. If you made the dough in advance, remove it from the fridge 30 minutes before rolling. When pressed for time, I put freshly made dough in the freezer for 10 minutes before rolling.

• For fruit pies, make sure the ratio of thickener (cornstarch or fl our) to fruit is correct. A general rule is 2 tablespoons cornstarch to 4 cups of berries or stone fruit or 1 cup fl our to 3 pounds apples. Cornstarch thickens yet keeps the translucent jewel-colored juices of berries and stone fruits clear. It's so disappointing to cut into a pie in which the juice leaks out, separating from the fruit and making the crust soggy.

• After it comes out of the oven, let the pie sit out to cool long enough before cutting, to allow the juices to settle and the filling to slightly firm up.





Banana Cream Pie


Makes: one 9-inch single-crust pie

Quinn: My nostalgia for cream pies comes from childhood dinners at the many classic roadhouses in our lakeside Canadian town. These pies are some of the easiest to master and are welcome any time of year. The crust is blind baked, which means it's lined and weighted down with dried beans or with pie weights and baked on its own without the filling. When the crust cools, a simple homemade pudding is spread in and topped with whipped cream.

INGREDIENTS:

1/2 recipe Basic Pie Dough
3/4 cup all-purpose flour, plus more for rolling out the dough
1/2 cup plus 1 tablespoon sugar
1/2 teaspoon coarse salt
2 cups milk
4 large egg yolks (reserve the whites for a meringue or other recipe)
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract
2 ripe bananas
1 pint (2 cups) heavy cream

METHOD:

1. Preheat the oven to 375°F. Position a rack in the center of the oven.

2. On a well-floured surface, roll out the dough to about 11 inches in diameter and lay it in the bottom of a 9-inch pie plate. Trim the edges of the dough to 1/2 inch over the edge of the pie plate's rim. Fold the dough under and gently pinch it together. Crimp the edges with your fingers or press with a fork all around. Prick the dough on the bottom twice with a fork.

3. Blind bake the crust: Line the dough in baking parchment or foil. Top with baking weights, dried beans, or rice to weight it down. Bake on the center rack for 20 minutes. Remove the weights and foil. Bake it for 10 more minutes, or until the crust is golden. Cool on a wire cooling rack.

4. Meanwhile, whisk together the fl our, the 1/2 cup sugar, and the salt in a medium saucepan. With the heat on low, slowly whisk the milk into the fl our mixture and cook on low heat. Whisk in the egg yolks. Cook for 1 to 2 minutes, stirring constantly and incorporating the thickening mixture as it forms on the bottom and sides of the pan. The mixture should coat the back of a wooden spoon. Remove from the heat and stir in the butter and vanilla. Cool slightly.

5. Slice the bananas into the bottom of the pie crust. Pour the pudding over the bananas, smooth the top, and chill the pie.

6. Whip the cream with the remaining tablespoon sugar to form stiff peaks. Spread over the custard mixture. Chill completely and slice.

A Successful Cream Pudding Filling

To avoid producing a pie filled with either soup or wallpaper paste, the pudding filling must be cooked to just below the boiling point; at this point the mixture should coat the back of a wooden spoon. While it may seem too thin, it will thicken more as it cools.





Basic pie dough

Makes: one double-crusted 9- or 10-inch pie

Quinn: Try making this both by hand and in a food processor; if you master both methods, you'll be ready to make pie regardless of what equipment -- or lack thereof -- is on hand. If you find yourself without a rolling pin, try a clean, dry wine or soda bottle, well floured, instead. Keep ingredients cold and work fast.

I prefer unbleached all-purpose flour, such as King Arthur or Bob's Red Mill.

INGREDIENTS:

2 cups all-purpose fl our
1 teaspoon coarse salt
1 cup (2 sticks) very cold unsalted butter, cut into pieces
1/2 cup very cold milk or water

METHOD:

1. In a large bowl or in the bowl of a food processor, combine the flour and salt. Add the butter and cut in or pulse until the mixture resembles a coarse meal. (To cut in means to mix cold fat such as butter with dry ingredients to form small pieces.) Pour in the milk. Combine just until the dough holds together in a ball.

2. Turn the dough onto a piece of plastic wrap and lift the sides toward the middle to press them together. Cut the dough in half. Form each piece into a disk and wrap in plastic. Refrigerate for at least 15 minutes. If the dough has been refrigerated in advance, remove 15 minutes before using. The dough can be made and refrigerated for up to 3 days in advance or frozen for up to 6 weeks.

Chef Rocco Dispiritos Cheap Yet Healthy Comfort Food

From Denny: The Early Show on CBS runs this segment called "Chef on a Shoestring" where the challenge is to prepare a three course meal for four people that costs under $40.

Celebrity Chef Dispirito has appeared on "Dancing with the Stars" TV show and has a new best-selling cookbook called "Now Eat This: 150 of America's Favorite Comfort Foods, All under 350 Calories." When we think of comfort food we usually don't think of the word "healthy." Well, Chef Dispirito will prove comfort food can be healthy with fewer calories and a lot less expensive! His cookbook is already topping the New York Times sales charts.

Baba Ghanoush: A Middle Eastern puree of eggplant, tahini, olive oil, lemon juice and garlic. It's garnished with pomegranate seeds, chopped mint or minced pistachios and used as a spread or dip for or Middle Eastern Flat Bread.

Blue Cheese: This genre of cheese has been treated with molds that form blue or green veins throughout and give the cheese its characteristic flavor. Some of the more popular of the blues include dana-blu , gorgonzola, roquefort and stilton. Blue cheeses tend to be strong in flavor and aroma, both of which intensify with aging.

Heirloom seeds (heirloom tomato): The advent of mega-agriculture in America has seen the gradual depletion of ancient varieties of native non-hybrid plants. Unfortunately for those who appreciate full-flavored fruits and vegetables, produce-seed conglomerates focus only on those strains that have mass-market appeal - which means they're beautiful and hardy, but not necessarily the best-tasting.

Fortunately, about 25 years ago some dedicated individuals began saving what they could of the remaining open-pollinated (without human intervention) seed varieties, which have become known as "heirloom seeds." Among the many heirloom fruits and vegetables grown today are beets, carrots, corn, dried beans, lettuce, potatoes and tomatoes. As the public becomes more aware of these wonderful alternatives, farmers are also becoming more interested. Heirloom produce can be found in some specialty produce markets and farmer's markets.





Wedge of Lettuce With Bacon and Blue Cheese

INGREDIENTS:

1 small head iceberg lettuce
1 small red onion, sliced very thin
1 large heirloom tomato, cut into large dice
3/4 cup of 3-Grams-of-Fat Blue Cheese Dressing or Bolthouse Farms Chunky Blue Cheese Dressing
6 tablespoons crumbled reduced- fat blue cheese, such as Treasure Cove
6 tablespoons real bacon bits, such as Hormel Real Bacon Bits
Salt and freshly ground black pepper


DIRECTIONS:

Cut the iceberg lettuce into 4 wedges. Place 1 wedge on each of 4 salad plates, and top each wedge with some red onion and tomato. Drizzle each wedge with blue cheese dressing, and top it with crumbled blue cheese and bacon.

Season the salads with salt and pepper to taste, and serve.





Charred Beef Burgers with Baba Ghanoush

INGREDIENTS:

1 medium eggplant
2 tablespoons 5% Greek yogurt
Salt and freshly ground black pepper
4 Ezekiel 4:9 Sprouted Whole-Grain Flourless Burger Buns
Nonfat cooking spray
12 ounces 90 percent lean ground beef, formed into 4 patties
1/2 cup "Russian Island" Dressing or store bought reduced-fat Russian dressing
4 slices heirloom tomato
4 slices red onion
4 leaves romaine lettuce, broken in half


DIRECTIONS:

Char the eggplant over an open flame, rotating it often to cook evenly, about 20 minutes. The skin should be completely blackened and the flesh should be cooked through.

Place the eggplant in a bowl, cover it tightly with plastic wrap (to steam off the skin), and set it aside for 5 to 10 minutes. Then remove the charred skin with a paper towel, leaving the flesh behind.

Chop the eggplant with a knife until it is a thick and chunky puree. Mix the eggplant and the yogurt together in a bowl, and season it with salt and pepper to taste.

Preheat a grill or grill pan over high heat.

Split the buns in half, and spray the split surfaces lightly with cooking spray. Season the burger patties with salt and pepper to taste.

Place the buns, cut sides down, and the burgers on the grill. Allow the buns to char slightly, and then transfer them to a platter. Cook the burgers for about 2-1/2 minutes per side for rare.

To assemble the burgers, spread the bottom buns with some of the eggplant mixture. Place the burgers on top, and then top each burger with some of the Russian dressing. Pile the tomato, onion, and lettuce on the burgers, and set the bun tops in place. Serve.





Sweet Potato Fries

INGREDIENTS:

2 medium sweet potatoes, scrubbed
Salt
Nonstick cooking spray
2 tablespoons fresh thyme leaves
Freshly ground black pepper
Sweet paprika
Cayenne pepper


DIRECTIONS:

Slice the sweet potatoes lengthwise into 1/4-inch-thick slices. Cut the slices into 1/4-inch-wide sticks. Place the sweet potatoes in a large bowl and sprinkle generously with salt. Let stand for about 20 minutes to release some of their moisture.

Meanwhile, preheat the oven to 450°F. Place a wire rack on a baking sheet, and set it aside.

Spread the potatoes out on paper towels to absorb any excess moisture. Then place them in a large bowl, and spray them with cooking spray. Sprinkle with the thyme and salt, pepper, paprika, and cayenne to taste. Spread the potatoes out on the prepared baking sheet.

Bake the fries until they are golden and tender, 35 to 45 minutes. Serve immediately.





Peach and Blueberry Cobbler With Ginger and Cinnamon

INGREDIENTS:

Nonstick cooking spray
4 ripe peaches, peeled, pitted, and sliced
1 cup fresh blueberries
1/4 cup plus 2 tablespoons granulated Splenda
3/4 cup plus 1 tablespoon Bisquick Heart Smart baking mix
1 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/3 cup skim milk
2 tablespoons Turbinado sugar, such as Sugar In The Raw


DIRECTIONS:

Preheat the oven to 425˚F. Spray a 7 X 11-inch glass baking dish with cooking spray, and set it aside.

In a medium bowl, mix together the peaches, blueberries, the 1/4 cup Splenda, and the 1 tablespoon baking mix. Pour the fruit mixture into the prepared baking dish.

In a medium bowl, combine the remaining 2 tablespoons Splenda, the remaining 3/4 cup Bisquick, and the ginger, cinnamon, and milk. Stir until the mixture forms a soft dough. Drop spoonfuls of the dough evenly over the fruit mixture. Sprinkle the sugar over the dough.

Bake the cobbler until the fruit is tender and the biscuit topping is golden brown, about 30 minutes. Let it rest for 5 minutes before serving.

Spring Into Grill Season: Mouthwatering Steaks

From Denny: Now that Spring weather has arrived you might want to get that grill cleaned up and ready for a mouth-watering steak. Chef Big Lou Elrose, the executive pit master at New York City's Wildwood BBQ, shares his successful recipe for spice rubbed pork steaks with apple bourbon barbecue sauce and grilled green beans.

Chef Elrose gave a few tips about his spice rub. He suggested you make it up at least a couple of hours before you wish to use it so the spices have time to blend together. He makes his rub months ahead of time and stores it in a shaker, ready to go. Since it has so much brown sugar in it you might want to refrigerate it, depending upon where you live.

Preparing the grill, Chef Elrose scrubs it down with a scrunched up piece of aluminum foil when his scrub brush is worn down or it's been misplaced. Then, to oil the grill, he places oil on a towel, and, with long tongs he oils the grill carefully. You can get flare-ups so be sure to use long tongs and stand away from the grill as you work. He also suggests leaving the rub to rest on the meat for at least 15 to 20 minutes before placing on the grill to cook.

Big Lou's Grilled Pork Strip Steak

INGREDIENTS:

Two 1/2 pound Pork Top Strip Steak (serves 4)

INGREDIENTS for Big Lou's All Purpose Rub:

2 cups dark brown sugar
1/2 cup kosher salt
1/2 cup Turbinado sugar (sugar in the raw)
1/2 cup paprika
1 tablespoon black pepper
1 tablespoon white pepper
1 tablespoon granulated onion
1 tablespoon granulated garlic
1 teaspoon Ancho chili power
1 teaspoon Cumin
1 teaspoon ground celery seed
1/2 teaspoon cayenne pepper


DIRECTIONS:

Combine all ingredients for the all purpose rub. Set aside.

Light grill to med-med high. Rub pork steaks with the all purpose rub then grill to an internal temperature of 160°F, about 8-10min. Just before removing from grill, brush with the Bourbon Apple BBQ sauce (recipe below). Allow to rest a few minutes, then slice and serve. Serve with additional BBQ sauce on the side.





Bourbon Apple BBQ sauce

INGREDIENTS:

2 tablespoons butter
1/2 cup chopped onions
1 cup course grated apple
1/4 teaspoon cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/4 cup bourbon
2 cups ketchup
1/2 cup apple cider vinegar
1/2 cup DR. Pepper soda
1/2 cup dark brown sugar
6 tablespoon maple syrup
1 tablespoon molasses
1 tablespoon Worcestershire sauce


DIRECTIONS:

Melt butter and cook onions for 6-7 minutes over medium heat then add the grated apple, cumin, cinnamon, cayenne pepper and bourbon. In a separate pot heat the ketchup, apple cider vinegar, Dr. Pepper, brown sugar, syrup, molasses, Worcestershire sauce, and simmer for about 3-4 minutes. Combine with the apple bourbon mixture and enjoy!





Grilled Garlic Green Beans

INGREDIENTS:

1 tablespoon olive oil
2 tablespoons butter
1 1/2 tablespoons garlic; chopped
2 cups green beans; blanched
Salt & pepper to taste


DIRECTIONS:

Over a medium high grill or stove top, heat the oil and butter in a large sauté pan. Add the garlic and toast just until it begins to brown. Add the green beans and toss to goat with the butter and garlic. Cook until the beans have warmed through about 4-5 minutes. Season with salt and pepper to taste and serve immediately.

Forget the Birds: Awesome Recipes 4 Stale Bread

From Denny: Chef Jose Andres of a restaurant in Washington, D.C., shares with us some great ideas of what to do with leftover stale bread. Many times my husband has come home with his latest "grocery prize" of day or two old artisan bread for a great price - only to discover it's so tough it can't be sliced easily. Grating it into fresh bread crumbs is an easy solution. If you are patient you can close it up into a plastic storage bag and place it in the fridge, take it out the next day and see if the crust has softened enough to slice. Usually, it does and all is well at our house once again. :)

Chef Jose Andres offers up some favorite recipes for stale day old bread from his native Spain like Castilian Garlic Soup, a mushroom and ham saute and a dessert by the name of Apple Charlotte. Yum! Since my great-grandmother came from "southern" Spain and was a wonderful cook I just had to see what she might have cooked in her day when she lived in Spain. Sopa de ajo (Castilian garlic soup)

Chef Andres: Wherever I go in my travels, I find Spanish people who are proud they know how to make this traditional Castilian dish, no matter which region they come from. My good friend Magin Revillo, the Washington correspondent for Radio Nacional de España (Spanish national radio), makes one of the finest garlic soups I ever tasted — even though he grew up in Barcelona.

INGREDIENTS

• 6 garlic cloves, peeled and sliced
• 3 tablespoons Spanish extra-virgin olive oil
• 2 tablespoons white wine
• 1/2 tablespoon pimentón (Spanish sweet paprika)
• 6 ounces rustic white bread, crust removed, torn into small pieces
• 1 quart chicken stock (see page 000)
• 2 large eggs
• Salt to taste
• 1 tablespoon chopped flat parsley

DIRECTIONS

In a medium saucepan over medium heat, sauté the garlic in the olive oil until golden brown, about 1 minute. Add the white wine and continue cooking until the alcohol evaporates, about 30 seconds. Add the pimentón and sauté for 1 minute.

Add the bread and pour in the stock. Stir together and bring to a boil. Once it reaches a boil, reduce the heat to low and simmer for 10 minutes.

Add the eggs and stir with a spatula to fold them into the soup. The eggs will form long strands, almost like noodles. Simmer for 2 more minutes and add salt to taste. Sprinkle with parsley and serve.
TIPS

You can make this soup with water if you like. It's the traditional way but I find that chicken stock makes for a richer and tastier soup. Instead of adding the whisked eggs, you can poach a whole egg per person: just break the eggs into a barely simmering soup and leave them for 2 or 3 minutes without disturbing.








Bread with oyster mushrooms and Spanish ham

Chef Andres: There are many different versions of migas, a dish that has sustained many a Spanish family when food was scarce. I often talk about recipes made of humble ingredients that can feed an entire family, and this is a perfect example. It shows what can be done when leftovers are the only option. Over the years many of these survival dishes have become beloved delicacies. I love this one for its simplicity and intense flavor.

INGREDIENTS

• 1 medium banana pepper
• 4 tablespoons Spanish extra-virgin olive oil
• 1 tablespoon minced shallots
• 2 cups oyster mushrooms or saffron milk cap mushrooms (available in autumn)
• 2 fresh thyme sprigs
• 1 ounce thinly sliced jamón serrano
• 1/4 cup seedless red grapes, halved
• 1 12-inch day-old baguette, thinly sliced (about 4 cups)
• Sea salt to taste

DIRECTIONS

Preheat the broiler. Roast the pepper under the broiler, turning it as it browns. Transfer the pepper to a bowl, cover with plastic wrap and steam for 10 minutes. When cool enough to handle, peel the pepper, discard the skin and remove the seeds. Slice the pepper into ½-inch strips and set aside.

Heat 2 tablespoons of the olive oil in a large sauté pan over medium-high heat. Add the shallots and cook until translucent, about 1 minute. Add the mushrooms and the thyme and cook, stirring, for 3 minutes. Add the jamón and peppers and cook for 1 minute. Lay the bread slices on top of the mixture and drizzle with the remaining 2 tablespoons of olive oil.

Stir the bread into the mixture and fry in the pan until it gets brown and slightly crunchy. Toss in the grapes and cook until heated through. Season to taste with salt.

Use day-old bread for this dish. You will get a better crunch.








Jaleo's Apple Charlotte

From: Chef Jose Andres

Makes 12

INGREDIENTS

• 7 apples (Fuji or another good baking apple), peeled, cored and sliced thin
• 1 cup sugar
• 4 tablespoons of butter
• 2 tablespoons of Rhum
• 1 teaspoon of vanilla extract
• 2 beaten egg yolks
• For the crust
• Butter
• Half a loaf of brioche bread, cut half into 1/4" cubes and the rest into slices as 1/4" thick


DIRECTIONS


In a large saucepan over medium heat, cook the apples with sugar until soft. Lower the heat and cover. Simmer until apples are soft saucy consistency. Add butter, rum and vanilla. Continue to cook for another 30 minutes. Remove mixture from heat and cool. Once cool, mix in the beaten egg yolks. Reserve

Clarify the butter. Toast the bread cubes in the clarified until golden and crisp. Reserve.

Preheat the oven to 325 degrees. In each ramekin, place crisped squares on the bottom. Dip the brioche slices in the clarified butter and line the sides of the ramekins. Fill with the apple mixture. Place the ramekins in a baking pan. Fill the pan with hot water until it reaches halfway up the side of the ramekins. Bake for 35 minutes turning the pan once during baking to ensure even browning.

Flourless Passover Chocolate Cake

From Denny: This recipe comes from the Sephardic Jews' traditional Passover dishes from the culture of Spain and Portugal and is based on Mediterranean cuisine.

Before the years of the Spanish Inquisition in the 15th century, many Jews were affluent, well educated and held high positions in the Spanish royal court. Once the Spanish Inquisition got geared up they forced two choices upon the Jews: leave the Iberian Peninsula or convert to Catholicism. Those that did not convert settled in the Caribbean Islands, eventually these Sephardic Jews migrated to the American South centuries later.

Most Jews in America are considered Ashkenazic, tracing their roots back to France, Eastern Europe and the Germanic countries.







Passover Chocolate Cake

From: Chef Ann Amernick in “The Jewish Holiday Baker” by Joan Nathan (Schocken Books 1997)

Serves: 10 to 12

Chef Ann Amernick: She created the recipe because people were always asking for a good chocolate Passover dessert. Most Passover chocolate cake recipes call for cocoa and potato starch. Chef Amernick uses real chocolate, giving the cake a denser texture. Strictly observant Jews during Passover would substitute pareve margarine for the butter if the cake is to be served with meat dishes. Chef Amernick prefers real butter to margarine for this cake.


INGREDIENTS:

10 ozs. good imported bittersweet chocolate, broken into pieces
1/2 cup unsalted butter (or pareve margarine)
1/2 cup sugar, divided
5 large eggs, separated
1/3 cup finely ground almonds (done in a food processor)
2 tbls. brandy
Confectioners’ sugar
Whipped cream, optional
Fresh raspberries, optional


DIRECTIONS:

1. Preheat the oven to 300 degrees and grease well a 9-inch springform pan. Line the bottom with baking parchment.

2. Melt the chocolate in a double boiler over barely simmering water. When the chocolate has melted, turn off the heat and leave it over the hot water to cool slowly.

3. Meanwhile in a large mixing bowl of the electric mixer, beat the butter or margarine with 1/4 cup of the sugar until the mixture is fluffy and almost white. Add the egg yolks and beat for 1 minute. Add the almonds and brandy and beat for 2 minutes more.

4. In a separate bowl, beat the egg whites until light and foamy while gradually adding the remaining 1/4 cup of sugar. Continue beating the whites until they are stiff and shiny.

5. Add cooled melted chocolate to the egg-yolk mixture and mix with a rubber spatula until well combined. Fold one-quarter of the chocolate mixture into the egg whites, then gently fold the egg-white mixture back into the rest of the chocolate mixture, taking care not to deflate the batter.

6. Pour the batter into the prepared pan. Bake on the bottom rack of the oven for 25-30 minutes or until a tester comes out covered with a thick, moist (not wet) and crumbly coating.

7. Allow cake to cool for 30 minutes in pan. Loosen edges with a knife, remove the sides and carefully turn the cake upside down onto a plate. Remove the baking parchment.

8. Dust with confectioners’ sugar. Serve warm, at room temperature or chilled with whipped cream and raspberries on the side, if desired.
